Viscosity does not happen when using water as the water will not stick because of it's different particles to red wine and honey. But why is this?

We are a Middle School Year 7 Class exploring Maths and Science. This term we are looking at negative numbers, equations and measurement in Maths. Viscosity is based on the thickness of the liquid. Water is not thick hence no viscosity compared to something like balsamic vinegar or honey which sticks to the glass.
